Sword - 2 ore 1 stick
Cleaver - 5 ore 2 sticks
Dagger - 1 ore 1 stick
Pickaxe - 3 ore 2 stick
Axe - 3 ore 2 stick
Shovel - 1 ore 2 stick
Helmet - 5 ore
Chestplate - 8 ore
Leggings - 7 ore
Boots - 4 ore
Currently the only way to mine ores faster is to make a pickaxe made out of the ore you are mining. All ores can be mined with your fist and if you make a pickaxe out of the ore then it will mine other ores of the same name faster.
The ores spawn underground, and depending on how much damage they do, will be harder to break, spawn deeper and less frequently, all items can be enchanted and work just like normal items.
